2 sea bass fillets
1 cup cooked quinoa

1 small aubergine
8 cherry tomatoes
½ red onion
1 handful black olives
1 handful rocket
2 tbsp extra virgin olive oil
Salt
Black pepper
Dried oregano/thyme
Fresh rosemary
2 tbsp extra virgin olive oil
1 tbsp lemon juice
Grated lemon zest
1 clove garlic, crushed
Black pepper
Dried oregano
3 tbsp extra virgin olive oil
1 tbsp lemon juice
1 tsp Dijon mustard
Salt
Black pepper
Rinse the quinoa thoroughly under cold water. Cook in an enamel-coated cast-iron pot for approximately 15 minutes. Once all the water has been absorbed, leave to rest covered.
Gently coat the sea bass fillets with:
Olive oil
Lemon juice
Lemon zest
Garlic
Dried oregano
Black pepper
Leave to infuse for about 15 minutes.
Chop the courgette, aubergine, and peppers into large chunks. Leave the cherry tomatoes whole. Toss the vegetables with olive oil and seasoning.
Arrange the vegetables inside your enamel-coated cast-iron casserole dish. Place the marinated sea bass fillets on top. Bake in a preheated oven at 190°C for approximately 20–25 minutes. Remove from the oven once the sea bass flakes easily with a fork.
Whisk together the olive oil, lemon juice, Dijon mustard, salt, and black pepper until emulsified.
In a serving bowl, arrange:
Cooked quinoa
Roasted vegetables
Rocket
Black olives
Top with the baked sea bass fillets. Drizzle the prepared dressing over the top and serve.
Due to its delicate structure, sea bass requires controlled cooking. To achieve the best results:
Do not marinate the fish for too long (acid can break down the flesh).
Always preheat your oven.
Avoid overcooking to prevent the fish from drying out.
Let the fish rest for a couple of minutes after taking it out of the oven.
Serve with fresh lemon.
These steps ensure the sea bass stays juicy and succulent.
Even heat distribution is crucial when cooking fish and vegetables together.
An enamel-coated cast-iron casserole dish:
Helps spread heat evenly across the entire surface.
Supports gentle, controlled cooking for both delicate fish and vegetables.
Keeps food warm for a long time after leaving the oven.
Can be brought straight to the table as a stylish serving dish.
