Ingredients
4 tablespoons of powdered tarhana
6 cups of water (you can also use meat or chicken broth if you prefer)
1 tablespoon of butter
1 tablespoon of vegetable oil
1 tablespoon of tomato paste
1 clove of garlic (optional)
Salt
Optional: black pepper, red pepper flakes, dried mint
Preparation
To make tarhana soup, first melt the butter and vegetable oil together in a pot. Once the butter has melted, add the tomato paste and sauté for a few minutes until it becomes fragrant. Then add the powdered tarhana and stir for a short while to lightly roast it. Gradually add the water while stirring constantly to prevent lumps from forming. When the mixture starts to boil, lower the heat and continue cooking for about 10–15 minutes, until the soup thickens. At the end of the cooking time, add salt and your desired spices such as mint, black pepper, and red pepper flakes. When serving, you can drizzle some butter melted with mint or red pepper flakes on top to enhance the flavor. Serve hot.
