Ingredients (Serves 2–3):
2 tablespoons of butter
1 cup cornmeal
1½ cups water (you can mix with milk if preferred)
1 cup grated Kolot cheese (or string cheese / Çeçil cheese / melting white cheese)
Salt (adjust depending on the saltiness of the cheese)
Instructions:
Place the butter in a pan and melt it over low heat. Let it slightly brown, but be careful not to burn it.
Add the cornmeal to the melted butter. Stir continuously and roast for 3–4 minutes until the raw smell disappears.
Gradually pour in the water while stirring constantly to prevent lumps. The mixture will become thick.
Once the mixture reaches a thick consistency, add the grated cheese on top. Do not stir—just cover the pan and let the cheese melt.
When the cheese melts and starts to stretch, your Kuymak is ready!
Serve hot. It pairs wonderfully with cornbread.
